This recipe was a hit at our recent Annual Congregational Meeting I call it : Elmo Salad Quick and easy, it takes about 10 minutes to prepare!! Thaw a bag of slice strawberries and pour into bowl juice and all. Drain a can of chunk pineapple and a can of Mandarin oranges and add to the bowl. Stir in a can of peach pie filling. Just before serving add 3 sliced bananas. TA DA!! |

I made this soup for Maundy Thursday Soup and Bread meal:
Pasta E Fagioli 1 lb. lean ground beef or Italian sausage 2 Tblsp. extra virgin olive oil 1 cup diced carrots 1 cup diced celery 3/4 cup yellow onion 1 large clove garlic, finely minced 3 (8oz) can of tomato sauce 3-4 cups beef broth 1 cup water 1 (15oz.) can diced tomatoes, undrained 1 Tblsp. sugar 1 1/2 tsp. dried basil 1 tsp. dried oregano 3/4 tsp. thyme salt and pepper to taste 1 cup ditalini pasta, uncooked 1 (15 oz) can dark red kidney beans, drained and rinsed 1 (15 oz) can great northern beans, drained and rinsed Romano or Parmesan cheese for granish Directions: Heat 1 tblsp. olive oil in a large non-stick pan over medium heat, crumble in ground beef or sausage and cook, stirring occasionally until cooked through. Pour beef into bowl, set aside. Heat remaining tblsp. of olive oil in same large pan, saute carrots, and onion over medium heat for 4 minutes, add garlic and saute for i more minute. Add all ingredients into slow cooker except the ditalini pasta. Cook on low temperature for 5 hours. Cook and drain pasta until al dente add to the soup and allow to cook for 30 minutes more. The longer the soup sirts the thicker it will be; feel free to add more beef broth to thin it out. serve with cheese and a crusty loaf of bread. A tasty meal to be sure!! |
